Snack Attack!

 

Fruity Nachos

This was one of the items we served at our latest round of cooking demos, but in case you missed it! This tasty recipe is below:

Most people do not think of fruit when they think of Nachos but then again most people do not think of meatball subs when they think of vegan…so we are all about changing perceptions and delivering delicious concoctions! 

What you need to start:

3 crispy and slightly tart apples

2 crispy red pears

Handful of raw jicama, julienned thin sticks

fresh lemon

 

Toppings:

Cashew Cream*

Nutty Super Drizzle* 

sliced almonds

pecans

flaked coconut

vegan soy-free chocolate chips

raisins

etc.

 

Cashew Sweet Cream*

1 C raw cashews, soaked overnight (12 hours)

4-5 medjool dates, soaked overnight

2 TSP vanilla extract

3/4 – 1 ¼  C water      +/-

Combine all ingredients, start with only 3/4 C water, and blend until creamy, about 3-4 minutes.  Add additional water 1 or 2 TBSP at a time until desired consistency.

If you find you added too much water, add a few more cashews and blend. Taste for flavor adding an extra date or two for added sweetness if desired.  Can also add some agave syrup and spices as desired.  Cinnamon, nutmeg, pumpkin pie spice, and allspice work well.

Makes anywhere from 1 1/2 cups and up, depending on how much water you use.

 

Nutty Super Drizzle*

1 C maple syrup

3 TBSP lucuma powder, sifted

¾ C raw almond butter*

2 teaspoon pure vanilla

Pinch of sea salt

Add the maple, almond butter, and vanilla to a food processor and process until well mixed and smooth/creamy.  Add in lucuma pwder and process again.

Can also add some agave syrup and spices as desired.  Cinnamon, nutmeg, pumpkin pie spice, and allspice work well.

 

Slice up the apples and pear thin enough so it will be easy to eat the slice in one or two bites.  Julienne the raw jicama.  Dunk them all in lemon water to delay browning.

Toss together and place on platter.  Drizzle with “Nutty Super Drizzle” and “Cashew Cream”

Next, top it all off with flaked coconut, sliced almonds, pecans and, of course, chocolate chips.   Drizzle a little more of the toppings.

 

Eat as finger food…just like nachos!
